24 oz Atlantic Cod, 4 [6-oz] fillets
1 1/2 Tbsp unsalted butter, melted
1/4 cup parsley, finely chopped
1 tsp lemon zest
1 clove garlic , grated
Preheat an outdoor grill to medium-high heat (about 425°F). Place a cast-iron skillet on the grill rack, close the lid, and preheat the pan for 5 minutes.
In a small bowl, combine the salt, black pepper, garlic powder, and paprika. Coat both sides of the fillets with cooking spray; sprinkle the top of the fillets evenly with the spice mixture. Carefully add the fillets to the hot skillet on the grill; drizzle with the butter. Close the grill lid; cook until the fish flakes easily when tested with a fork, 8 to 10 minutes.
In a small bowl, combine the parsley, lemon zest, and garlic; sprinkle evenly over the fillets.
